Combine all the classic flavors of summer into one simple dish! This Caprese Salad with Peaches made with Harry & David peaches brings simple ingredients together to create a perfect side dish for any late-summer meal.

Although a simple Caprese Salad is delicious on its own, a few additions can make a good thing great! One of our favorite ways to do that is by adding sweet flavors, like Harry & David Oregold Peaches, and savory flavors, like rolled Prosciutto. You're definitely going to want to give these additions a try! Since there are already so many wonderful flavors going on in this Peach Caprese Salad with Prosciutto, we keep the seasoning and dressing to a minimum. Feel free to adjust it to suit your taste preferences by adding more oil or balsamic to the recipe. This recipe is also so easy to create and can be thrown together in a few simple steps. This is a refreshing and appetizing way to savor summer!

Fresh Summer Caprese Salad with Peaches

Ingredients

  • 3 Harry & David Oregold Peaches, pitted and sliced into wedges
  • 2 medium heirloom tomatoes, sliced into wedges
  • 1 cup cherry tomatoes
  • 8 ounces fresh Ciliegine "cherry size" mozzarella cheese, drained
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup balsamic vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 ounces prosciutto, cut into strips and rolled
  • 1/2 cup fresh basil leaves, torn

Instructions

  1. In a large bowl, gently toss together the sliced peaches, sliced tomatoes, cherry tomatoes and mozzarella cheese while you drizzle in the olive oil and balsamic vinegar and sprinkle in the salt and black pepper.
  2. Fold in the prosciutto and basil leaves.
  3. Divide the salad between serving plates and enjoy immediately.
