Kentucky-Bourbon BBQ Chicken Sliders

Nick Evans | Lunch, Appetizers, Relish |American

It's grilling season and these BBQ Chicken Sliders are the perfect casual backyard food. Using Harry & David Kentucky Bourbon BBQ sauce, this recipe will soon be on your summer grilling rotation!

These BBQ Chicken Sliders are a nice change-up from your standard hot dog or burger, but just as easy to make. Harry & David condiments like BBQ sauce, relish, and grilling sauce is what you need to take your grilling game to the next level.

In addition to the sweet and tangy BBQ sauce, the crunchy carrot and cabbage slaw (with a bit of honey) rounds out each slider and gives it a nice crunch. Serve them as a hearty appetizer or stack a few on a plate and make a meal out of them. Either way, they're a great way to celebrate warm weather, good friends and family, and delicious food! These will definitely be on the grilling menu all summer long!

Ingredients

For the Sliders:

  • 1 ½ pounds chicken breasts or thighs, boneless and skinless
  • 2 tablespoons olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon ground onion
  • Harry and David Kentucky Bourbon BBQ Sauce
  • 12 Hawaiian Slider Rolls
  • Pickles

For the Slaw:

  • 2 cups shredded green cabbage
  • 2 medium carrots, grated
  • ½ small red onion, sliced thin
  • 2 tablespoons olive oil
  • 2 tablespoons white wine vinegar
  • 1 tablespoon honey
  • ½ teaspoon salt

Instructions

Preheat Grill:

  1. Preheat grill to medium-high (or direct heat if using charcoal).
  2. Drizzle chicken with olive oil and season with salt, pepper, and onion powder.

Preparing the Slaw:

  1. In a large bowl, combine shredded cabbage, carrot, red onion, olive oil, vinegar, honey, and sugar.
  2. Stir well to combine. Slaw is best if it can rest in the fridge for at least 30 minutes, but is fine to use right away also. Slaw will keep in the fridge for 2-3 days, but lose some of its great crunch after a day or so.

Grilling the Chicken:

  1. Grill chicken over medium-high heat for about 6 minutes per side until chicken reaches 165 F in the thickest part of the chicken.
  2. When you flip chicken, generously brush chicken with Harry & David Kentucky BBQ Sauce.
  3. When chicken is cooked, remove it from grill and let rest for five minutes before slicing it for sliders.

Assemble the sliders:

  1. Add a small handful of slaw to a slider bun.
  2. Top with a few slices of grilled chicken, drizzle with extra Kentucky BBQ Sauce.
  3. Top chicken with a few sliced pickles and the top slider roll. Serve immediately!
